Ten day origins tour of both coffee and chocolate. We will visit a coffee nursery and plantation during harvest time and learn how to ferment and process coffee to the roast. We will also visit a cacao plantation and ferment, dry and roast our own cacao. We will take the cacao through to complete the chocolate through roasting, making chocolate liquor, conching, tempering to making our own chocolate bars. Very complete tours of both chocolate and coffee in English. This double origins tour will be held in Mindo, Ecuador, #1 for number of bird species in the world. Mindo is set in a beautiful protected cloud forest known for its waterfalls, orchids, butterflies and of course world class birding. I forgot to mention that we will be visiting a Cup of Excellence winning coffee plantation.
