has anybody else come across milk (especially full fat) that just refuses to froth (for cappuccinos). we come across it quite often, where a whole batch of milk froths then just collapses, the bubbles just burst and it all falls flat. we even asked our dairy suppliers to check it out for us but they have no idea as to why it's happening.

any ideas people???

It has happened at a few shops that I know of in town, including mine. The culprit is almost always that the milk was frozen somewhere between the cow and my pitcher, whether it be the delivery truck or an overactive BoH fridge. And as far as I know, there is no way to fix it once this has happened. Talk to you delivery person, check your fridge temps, outside of that . . . it's pretty much out of your control. Fortunately for us, we have a really great relationship with our milk folks, and we haven't had a problem since we've addressed this issue with them.

For Jen, this seems to be the likely culprit as other shops on the drivers route are having the same problems. Talk to the driver and ask them to make sure that their air is circulating in the trucks properly and they have the appropriate thermostat settings. If approached reasonably and genuinely then I couldn't imagine a problem developing.

hey chris, i had heard this theory before with the change of feed for the cows. it's a strange one. x
thank you so much for this lorenzo. that makes a lot of sense. we have a great relationship with our milkman, and any problems he just sorts out no questions asked. but i might ask him in future just how long the milk has stood out on his van. thank you.

If you'd like to reply to a specific post, click the "reply to this" link right in that post. This will cite the previous post in your reply and give us an idea of which post you are replying to.

Regardless of which method, your reply will appear at the bottom of the list. I like this approach because it keeps your reply from getting lost in the earlier pages of a discussion. It can make discussions a bit fracured though...

Hi Lu, Yeah it's a bit of a mad one alright. I'm definitly more on it being over exposed to too much light now. Not really lived it down since i tried to tell the customers about the cows and their feed!!!
ha! thats the same with us, tried explaining it to the customers and got the strangest looks! so yeah, we kinda keep that to ourselves now!!
