i have people come in and want decaf. ive been able to pursuade a few to drink dark roasts instead because they appearantly have less caffeine, does anyone know what the difference really is? is there a substantial amount i can tell the customer? (i.e. yea, a dark roast has like 30 mg less caffeine on average, etc.)

next question,

what do you look for in a shot? i look for the cremas colour, the body, over all taste (not too bitter, etc.) but that all seems pretty basic. so i geuss im just wondering if im missing something.

No, it's not a substantial amount, and dark roasts would only have less caffeine bean for bean. By weight, a light roast will have less. The reason is that, when roasting, the water from the bean will evaporate at a much higher rate than caffeine. You should just let those customers know that decaf is unavailable. You may unintentionally give someone a heart attack or something.
The caffeine difference between a light roast and a dark roast is so small that your body can't tell the difference. I'm not sure of the exact number but its not much if anything. If you don't want to brew decaf because of waste then try to sell your customers a decaf Americano.

As far as espresso, the most important thing is taste.
