Great topic. I will build a commerical cart when time allows so this is a hot topic for me. I have not studied the existing carts that are out there now so I'm very green on this question. I want to duplicate my commercial set up but is that possible? All water to my espresso machine is filtered.
If I could dupicate this setup the water for the presspot would come from the water spout on the espresso machine. No recovery time and pure water to boot. Now if the cart doesn't have a 'spro machine none of what I said here counts. Joe Robertson
when you say filter for espresso it should be a water softener or an r/o system, you dont want to soften water to a coffer brewing device the reason being is if the water is to soft the lack of minerals in the water wont pick up the coffee as well i know this is a vague description but basically you need the hard minerals more so in the coffee, see http://en.wikipedia.org/wiki/Solubility . . . if you wanted to go nuts you could always contact someone at this site http://www.scaa.org/awards_golden_cup.asp#judging for a best water hardness level im sure they'd know they do a test to see how much coffee you can dissolve in water by using a tds meter (total dissolved solution) the two main factors in this are 1. temperature (does your sugar dissolve well in iced tea vs hot) and 2. hardness of the water. you could say the amount of coffee (grounds being used aswell but im not getting into that nor counting it in this discussion)
although you could just use a normal in line filter that shouldn't affect your gpg
