Hey There,

My family and I will be road-tripping in Mexico for all of January and some of February.  I have a small coffee business in North Carolina and am wanting to get more in touch with and learn more about the whole process of the coffee I'm serving from seed to cup.  Does anyone have any good suggestions about Fincas to visit in Oaxaca and Chiapas.  I have found a few online but most of them seem to be  super resorty and expensive.  Any help or suggestions would be greatly appreciated.  Thanks so much

Hello, i am a Specialty coffee roaster in Mexico City and i woul suggest you if you want to get in touch with the best processes and practices in Chiapas, contact Finca Hamburgo in tapachula, where , by the way, will be celebrating their 125th year and there's gonna be a lot of worksops and conferences. Send me an e-mail if you would like to go. The produce the coffee that our recent barista champíon used for his routine. If you want to go to Oaxaca you should contact Finca 2 de noviembre in the Zaragoza Region (municipio).
