I was wondering if there were any coffee shop owners/managers willing to take on an intern that would like to see and learn how a shop operates. I can imagine a great many practical reasons why a shop owner/manager would be opposed, but on the other hand, the coffee shop owners I've run into have been more than happy to discuss the details of their road to shop ownership and offer to answer questions and the like.

I just started my part-time MBA program at NYU Stern and am working full-time during the week in Central Jersey. While I plan to work for the corporate scene for the next couple of years, I'd love nothing more than to have the opportunity to put in a few hours on Sundays in a shop either in NYC or Philadelphia or anywhere in between and getting some hands-on experience. In your experience, or speaking as a shop owner/manager, is this something you think would be plausible if I were to approach some shops and ask?

Just thought I'd ask!
