How many of you serve coffee in disposable cups and in porcelain cups? How do you manage your menus serving both? Most places where I live serve only in disposable cups. i want to offer both. Feasible?

We normally would ask the customer when they are paying for their drink if they would like it for here or to go, and of course if for here we put in porcelain cups and to go went into disposable cups. If they are staying in why give them a disposable cup? Cost you money! You can save $$$ daily by giving customer the choice of a nice mug when they are staying in!
We serve drinks in house in porcelain and to go in disposable. It means washing dishes, replacing dishes, and being clear about what the customers want but it is certainly feasible.

I also think it is much better for presentation and easier for latte art. And of course it is much better for the environment because you decrease waste.
Both of my brethren are correct on this. I am opening up a new cafe soon (my 2nd) and we will service in-house in mugs. This is good for two reasons: the image of being "green" which your customers will truly appreciate, especially if you are the only cafe in the area to offer this. The other reason is that is CAN save you money IF you make sure that the mugs don't take a walk out the door. Put up a sign explaining how it hurts you and them when they are stolen - your customers will appreciate this as well.
