There are a ton of quality espresso machines out there...and there are a tone of machines that cause nothing but problems. If you could design a perfect machine for a busy shop, what features would it have? Think outside the box. If money was no object, what would you like to see? Would it be a Slayer? Hydra? Speedster (or Mistral)? GB5? I'm looking for the best aspects of all of them.

For instance, mine would have to have a PID system, the GB5 preheater, Synesso insulated steam wand and lever operation, speedster group paddles, Hydra individual group boilers and pressure adjustments, etc.

And yours?

i think you just named the best of all worlds but lever's in a machine with pump you lost me there. although there is a company that made a 2 group that was a lever and pump for the groups individually?
I was refering to the steam wand operation on synessos. I work on a linea everyday, but have had the chance to use synessos on several occasions. What I meant was they lever you pull to steam milk I just can't remember the technical name for it.

Daniel- I'm totally digging this question! Your "dream machine" would be awesome. On the outside I'd have to go with Linea drip trays and wands, Simonelli steam levers and wand tips, automatic back flush mode, built in timer and level, an americano jet on the left and right (toggle switch), LED lights, wooden handled LM portafilters, all metal exterior, and feet that could be raised/lowered effortlessly.
sweet. Can't say I agree wit the simoneli steam levers and linea wands, though. I like the omnidirectional insulated synesso wants so much!

Frankly I think my dream machine would be designed and built from the ground up, rather than a mish-mash of other machines. Were I to design my 'dream machine', the whole point of it would be to ask 'why?' on almost every aspect of the machine and work to try and either improve upon or replace current and past design and engineering conventions.

I guess it makes me sound like a bit of a wanker really.

Things i would look at and try to achieve would be...
- Super low profile (300mm tops)
- Espresso dedicated - no steam, no hot water spout
- Completely seperate steam machine
- Why 58mm baskets? Why triples? Could you go deeper? Could you go wider and shallower?
- Could temperature and pressure probes be installed within a group head?
- If so - Data logging

That's it off the top of my head.
