Most stuff in decent working order is worth between 10-15% of its original retail value. With some exceptions for higher end equipment. If you email an equipment list I'll provide my private opinion on values. Sorry to hear things haven't worked out for you.

As to your question:
Provided you are the original owner of the equipment - wasn't used when you bought it, and can show a maintenance schedule... after five years, value is around 15 cents on the dollar - with the exception of certain espresso machines which will hold their value very well and be closer to 40 cents on the dollar or better. Highly sought after equipment may hold a higher value, but in general, I think that's what you're looking at.
Things like refrigerators, ice machines, etc. with compressors usually don't have any warranty past five years and it's the compressor that will need replacing. That is why their true value is so low. However any replacement of key components can help maintain a higher value.
A good way to gauge is to find a local seller of used restaurant equipment and price it in that range minus a little bit. While these places generally have no warranty on their equipment, everything tends to be "professionally" refurbished. If you are selling as is...
We've got an Astoria Argenta 2 Group Semi-Automatic Espresso Machine, a couple of mazzer grinders, one of which I believe is a major, the other I believe is a super jolly...we also have a bunn 3lb bulk grinder, as well as a double hopper bulk grinder...those are the big items, other than an island oasis blender...
