We make our own syrups, Raspberry (for Italian Sodas), Simple Syrup, Vanilla (with direct trade that we purchase from a co-op in Veracruz), Sugar Free Vanilla, Caramel Sauce, and a Scharfenberger Ganache for Mocha. I spend about four to five hours every Monday making syrups for the two shops that we have, it's about the same price point as buying bottles of 1883, we have more control over the flavor and offerings . . .
Why aren't more people doing this?

I applaud your efforts to make your own syrups, and agree that this process gives you more control over the flavor. Not sure what you mean by more control over the offerings, as the syrup companies seem to be outdoing eachother coming up with new flavored syrups. (I recently received a sample of lavender syrup. Really? Lavender?)
My main concern is that you are investing four to five hours per week making your syrups, and not saving money over the pre-made syrups. Whatever your time is worth, are you sure it is worth making syrup rather than buying it.
It is not for me to judge, as you appear to be very successful doing what you are doing. Just wondering out loud.
