DD, you're welcome... that's what we're here for. Glad to see that you are getting close. Can't wait to see the space.

I prefer paper cups. Environmental considerations aside, both kinds kick off subtle (and not so subtle) flavors and aromas when filled. I personally can't stand the aroma of hot styrofoam. I also think the paper cup is a bit nicer.

We use the Dixie Perfect Touch for hot and get them from Sam's and Costco. Many advise against this, cause it isn't quite as classy as some other options. Our customers like them (and most prefer them over a paper cup + jacket).

The other supplier we've used for paper is Reliable Paper (online, perhaps from Atlanta?). Being Charlotte local, you should also call Michelle at Dade Paper (please tell her I sent you :). They sell the Insulair cup (nice, but pricey), the Solo cups, and a big variety of stuff like bakery paper.

Agreed. We use them for Monin, Ghiradelli, and Big Train. They are in Georgia, but have a truck that does Charlotte on Wednesday. Friendly folks, really good prices, good selection, cheap shipping. You'll want to contact Lindsay Graves. Be sure to let them know you heard about them here.

We get our fatique mats from our linen supplier. Sure we're "renting" them which is a little more expensive than buying them, but we never have to wash them, which if you've ever done that, is a big hassle, and actually the same price if you figure paying somebody $10/hour to spend 1/2 hour or so cleaning them off. Also, our mats are very lightweight so we can move them around easily without breaking our backs.
