I know this is gonna sound stupid but...

my crema is hardening and dissipating real quick- the coffee I'm using is 4-5 days old so is it too fresh and needs more degasing or or has it staled - help!!!

okay this is my two cents. how dark are the beans roasted? cause if there's a considerable amount of oil on the outside of the bean that can give you some weak crema. also it could be your grinder i've got a flat burr mazzer that can be kind of squirly you gotta love those compak conical's or some equivalent. also Tyler Stevens made a good point in that a lot of the new crops are coming in right now so your roaster might have mixed things up on you.

Not sure if someone has mentioned this already but you might want to check the temp and the pressure on your machine.

If the pressure is too high or the temp is low it will produce weak crema. I hope this helps.
