On average, what is an estimate for the number of lbs sold in a week. This includes espresso, bagged coffee, pour over/ brewed/ mail order.
How much coffee does a coffee bar (directly) for each harvest? Year? First year?
This is me saying...I have no clue how much is needed for a new coffee bar.

It's good to ask questions, but this one seems to indicate you need to work on a basic business plan. The amount of coffee you purchase for roasting will (on some level) be in direct correlation with the amount you plan to sell. How many drinks do you think you'll make each day? Twenty drinks (or whatever) per lb, and you're going to lose 18% (give or take) of weight post-roast. How's your cash flow? How much green can you afford to sit on? Is that coffee you really like still going to be there in two months? Two weeks? How much are you willing to pay in shipping costs for more frequent shipments? Know that importers generally won't break bags, which are 132-150 lbs. You can purchase great green coffee in smaller amounts from places like coffee shrub, but you're going to pay $1-2 more per lb, along with the considerable expense of UPS (instead of LTL) shipping prices. Etc. It all starts with figuring out how much coffee, and what kinds of coffee, you think your customers will purchase.
Buy enough, but don't buy too much.
