I am trying to make a kyoto style iced coffee maker, any suggestions?
I have been researching Kyoto iced coffee towers for a bit now and haven't found much about them. They are about $150-$400 depending on how big you want and are for sale at http://www.northwestglass.com/glass-cold-brew-coffee-maker-p-319.ht...
I am interested in making one myself, and was wondering if anyone has any suggestions before I get started.
I have a glass piece that i am going to use for the top, and am going to figure out how to fit a valve to it,
my concern is with filtering, do I use a regular paper filter and cut it to size? Do i go for a mesh filter? How do I prevent clogging/over flow, while also keeping a slow brew time? I'm just getting into this and any suggestions are appreciated.

In order to reverse engineer an item seems you physically need access to said item. That or at least detailed schematics. I highly doubt the manufacturers of said items are going to give you schematics to knock off their works. You could try and find somewhere that has one and spend time studying how it works...
