we had an old rancillio epoca at our shop years ago and we just backflushed as usual. there wasnt any problem. i believe you should be backflushing on a regular basis. I do it twice a day just out of habit.

Your Epoca does have a 3-way valve. We like Puro Caff cleaner and they have detailed instructions for use on their site. Go to the puro caff site, then products, select "puro caff espresso machine cleaner", then select "instructions for use". These instructions would be good for Cafiza and other cleaners too. Do this daily to insure a good quality product and fewer breakdowns.
