Does anyone know how long an iced mocha or iced white mocha made fresh will stay palatable? I manage a coffee bar in my church and we were asked to supply iced mochas and iced white mochas for an event. We determined a recipe and made them in bulk a couple of hours in advance so we could simply pour them over ice at serving time. We used fresh espresso shots and white sauce in making them. We ended up with 4-5 gallons of each left over and I'm trying to decide if they will keep for a few days or if I need to just throw them out.

Back in another life in IT field service I used to make "Road Warrior" white chocolate mocha by the half gallon (6 doubles) and put it still warm in 3 clean Sobe' bottles then refridgerate. It would keep fresh tasting for better than week. However, the key was immediately bottled still warm and the lids would form a vacuum as it cooled in the fridge. When in the cooler on the road I'd consume a bottle during the day. Noticable taste decline after only a few hours of breaking the seal even though screwed tightly back on and kept cold.
Try it.

If you kept them cool, the dairy component will be good up to 5 days from opening... so you won't make anyone sick. Just sample them before serving to verify that they still taste good, and toss them once they fade. Then let us know what you observe.
