I'm looking to add a pourover bar to my shop that currently just has french presses, airpots and a two group simonelli but I don't have alot of experience with manual brewing.  I've been playing around with a chemex,a V60 and a 6cup vacpot, but I'm not sure what is the most practical to serve without it being too cumbersome.  I have also been looking at the Clever, but haven't had a chance to play around with it.  If you have a preferred method, I would love to hear all about it so I could choose a method or two.  I'd really like to have a few V60s and a few smaller vacpots, but I don't know if there is something else that might brew better coffee or easier to manage on a busy saturday afternoon.

I also have only been using cloth filters that I picked up for the chemex.  Does cloth or paper make a huge difference?
