Our shop uses a Rancilio Class 10, and I've noticed that the disperison screw invariably mars the (dry) puck. Today, I downdosed until it no longer did this, and found that 14 grams is the maximum one can use. A leveled and tamped portafilter will be marked prior to extraction.
Needless to say, this means you cannot use any leveling/re-distribution technique at all! This stinks. Any input?

Fortunately, you aren't serving the dry puck. Just dose, distribute, and tamp like you would on any other machine. Lock it it and pull the shot.

It may theoretically create an opportunity for channeling, but that doesn't seem to be an issue. Good idea to get a naked pf.
You're correct also about headroom. Remember that this screw has a thick head though, so even if it's half buried there will still be a dime's worth of clearance at the screen.
All that said, you may want to buy deeper baskets. Your portafilters probably won't accommodate full 20+ gram triples, but an 18 gram basket like the VST or other aftermarket baskets should work well. The stock Rancilio basket IS really shallow as you've noted. I've switched several of my customers that run Rancilios over to the 18 gram Nuova Simonelli basket and its made a big improvement.

Thanks for the reply, Brady. Yeah, that is kind of what I figured: don't sweat it. The only reason I care is because I have read that it causes channeling and that the screen needs headroom.
If I could get a naked portafilter I guess I could find out.
