Hi. I hope this is the right way to do it. I am a homeroaster and bought a used Probatino from 2004 with thermostate( auxiliary for taste and duration and mainflame) so I don´t have a mediumtemp for the gascontroller with this model so I have to change between about 3,5 at the gascontroller for mainflame and 4,5 for auxiliary. I have baptised it high and low. My big wish is that someone here will correct me for what I so far managed to roast. My roaster was set up in a gardenledge with 100 mm. aluchimney and a gasregulator which ensures a constant pressure o51 on Main and 49 on auxiliary and the setup was pr. email/pictures approved by a Daniel Schmidt from probat in Germany. My roaster is green so I think it is born at Leogap in Brazil.
So here is my present procedure:
1. Warming up for half an hour on 110 degrees on digital thermometer.
2. Flamecontroller on pos. 3 low, dropdown.
3. After 1,55 min the temperatures hits bottom and I go to high gear for about 20-25 seconds until temperature increases which can be seen on the digitalthermometer.
4. When the temperatureincrease is getting slower I go back to low gear.
5. I continue this intil the beans are yellow. Now I give the beans the high gear for longer periods 1 minute and then back a little and then more heat again and so on. I do this in order to get a first crack sounding moderate between dull and agressive.
6. After 30 seconds I go to low pos. waiting 1 minute and then high gear and when the second pop starts then out in the coolingtray.
I had some great frenchpresskenyas stopped before the second crack but my espressi need some more sweetness.
I hope someone will correct saying what is absolutely wrong and tell me what to do during the roast.
How to dry the beans and maybe the amount of heat for soft and hard beans and where should I even get more attentive when I want more sweetnes without making the beans shiny so I still get the magnificent flavours.
I manage to roast with a constant raise of temperature and my roasts have taken between 11,30 and 16,30 minuts.
