I am taking over a coffee shop in a few months where I will be purchasing the assets from the landlord and renting the space from him. The whole place is setup and has what I need but I need to create the menu. A few questions:
How many of you are offering Decaf? I was reading that you shouldn't really bother because it will cost you more than its worth. A book I read advised having decaf espresso beans for Americanos but not to do drip.
What to-go sizes do you offer? Almost all of the orders will be togo and I was thinking about maxing out at a 16oz cup.
Do you find that a smaller more specialized menu is better than an extensive menu?

Smaller is better--especially for a new shop. Do a few things, and do them well. You can always add drinks as you get more efficient and see what customers want.
You should offer quality decaf. Nothing wrong with by-the-cup.
As for drink sizes, just create some ratios. Price out your cost of goods for different sizes and see what makes the most sense. But generally speaking, huge milk drinks are going to be losers. Again, smaller is better. But there have been lots of threads on this stuff on BX. Also check out coffeed.com, where there have been discussions about drink sizes as well.
