Hello all,
This is Kevin Selig of Upper Midwest Gourmet in Minneapolis. I was working on some training material recently and ran across this article that I made a few years ago about how serious the Italians were taking their beloved espresso in response to the "Big Chain" style coffee shops invading their country.
Take a peak and let me know if you agree with some of their findings and ideas. I usually put this paper in the front on any training folder I give out as an inspiration to any new or existing baristas (and/or cafe owners)
