I've been looking at a Wega Polaris 2 grp to open my cafe because of price. Although, this is not my ideal starter machine. There is an Astoria/Wega company based 45 minutes from me, so that helps. I know this isn't a typical cafe setting machine.
Any advice about this machine is really appreciated. I just need a workhorse that's great to open with to produce a great product.

It sounds like you have a good set up. Just remember to experiment with the heat flush. I love the texture that the E-61 groupheads can produce. It can almost be like cotton candy. I have yet to get a shot like that from a Linea. I got one that was close from a NS Aurelia with the WBC mods but the E-61 has been the clear winner for me in my "godshot" quest. I'm confident that others will vehemently disagree with me in regards to the Linea. And don't get me wrong, Lineas are fantastic machines, I just can't get the results from one like I can with the E-61. I'm sure user error plays a part.

I'm with you, Mike... the La Marzocco obsession can be a little much. There are lots of great machines out there worth considering. Flat isn't really everything, people...
The CMA machines are well built workhorses. The Wegas just haven't been as aggressively marketed as the Astoria. Very similar machine though. Don't worry, your Wega will work quite well.
Jennifer... if you haven't already committed to Mazzer, consider the Wega/Compak K.10 Conik. It is a way better grinder than the Super Jolly, and if you asked your General Espresso friend you might find one at a price point that you'd like. I've had one on bar for the last couple of months, and aside from a couple of minor pet peeves I've been blown away.

When I start hiring, I just don't want baristas to get scared off because I don't have a popular machine.
Brady When i propose the lenea i never said that the wega wasnt good . I said that i did nt know about them that all! I propose the lenea for only one reason. i know about this machine and this machine show that was a workhorse. Big chain use those machine for decade when under qualifie barista and thousand of customer a day abuse the pour lenea . When they finally decide to change machine for full automatique . Well those machine got sold to other that refurbish , update and used them again for decades . With in general no serious problem.
That mayby why i refer la marzocco and there is a obession about la marzocco since i dont know any machine that can be abuse as much as the lenea.
jennifer : i am sure this machine would be perfect for you tho . i read a bit about and it look like a decent machine. And barista wise well i said that if you want to produce a perfect espresso and you use good shot and milk ethic and a barista don t want to work for you well i said anyway you dont want that barista in your shop. Snobish is a big problem in barista world. after all the only thing that mather is the final product
