I’m brazilian, born in Rio de Janeiro, living in Leblon, and lived 8 years in the US, San Diego-CA, working on restaurants and cafés.

My experience range from US$20 dollars pizza place to US$3000 dollars a dinner for two in a fancy french restaurant which it’s Chef and owner Jean Michel Diot was nominated for Nobel food prize and won 4 times the best Chef in America contest! Altogether, i've being inside this industry for 17 years doing all kinds of jobs in the US, in Brazil, and United Arab Emirates.

I gather all that experience, come back to Brazil and start to working as an independent operations professional consultant for various companies implementing a working system into restaurants and food business.

As a consultant, I've been training staff, writing down company operations manuals and procedures check lists; buying equipments and utensils for kitchen and floor; hiring and/or firing employees establishing standards for personnel performance and customer service, and providing a good working environment for all department employees. Setting up maintenance and cleaning schedules, and establishing standards of cleanliness and sanitation to be adopted in all restaurant kitchen areas. Some times helping on the menu development. Testing cooked food by tasting and smelling it to ensure palatability and flavor conformity. Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner within the company standards.

For new restaurants i review the restaurant concept and menu plan in order to choose equipment for that menu, working with the architect and engineer to get the proper location inside the kitchen and floor, to fit the restaurant’s flowing operations. Then create a list of the equipment needed, including the quantities of each item. Solicit bids for new equipment, scheduling delivery, conducting installations, and clarifying warranties. After that I hired staff, trained them, planned the daily production, and open the store.

On top of all that, i bought with me some food business ideas from the US and around the world, and adapted them to Brazil in terms of menu and concept. All of those project are done in terms of recipes, design, working procedures, and some finances.

Knowing the potential in Brazil's market, now i'm seeking investors to come up with the money to open one of those business - they range between US$100 thousand to US$3 millions.

As you might know, Brazil has been growing over 5% a year, and we're going to have the Olympics and the Soccer World Cup in the next 4-5 years. Therefore a lot of people, foreigns included, are coming down to invest in all sorts of business, and one of them is hospitality - hotels and restaurants.

You can do some research about all this and you'll see !

If you have some friends or partners who wanted to invest, this is the right spot! Brazil is huge and anywhere in the country you can do just fine. Specially in the northeast where people have money in their pocket to spend, but they don't have so many options in terms of food business.

If we can open one concept store then we can surely franchise, and move on to another project, if you know what i mean!
