How many days after roasting do you think any coffee tastes it's best?

I find there is a peek or favorite day of taste after the roast date. First day never seems to be the best for me( possibly needs more time to degas)but day 3 is great but by day 7 seems to be a different coffee.and this differs from coffee to coffee. Is this traceable? What are your thoughts?

I believe the fourth day is the best for me because it had the time to degas plus it is still fresh. On the 7 day the flavor of the coffee is still in place, but not as great tasting as the fourth day. I enjoy the coffee. This can be traceable because the coffee is packaged at similar times.
