I believe the movements of the baristas can be somewhat choreographed for a good pace in a good space. I've seen baristas get into their groove; it can be a bit of a dance. We want to take everything into consideration: glass milk bottles in efficient refrigerators in exactly the right spot. Plumbing, filtering, drainage, knock boxes, waste, a big collection of ceramic cups, retail products, sound, tables, comfort, customer flow, cash register, music, ambience, deliveries, FOH business, art etc. i can go on. I've designed several kitchens and spaces and though the results were good, I have an idea of what bad design and poorly considered spaces can mean. I've been a chef on private yachts for the most of the past five years and have seen it all. I know where to find coffee shop designers, but I wanted to ask here - on Barista Exchange in hopes of finding or starting a discussion that might benefit the Barista Exchange community. I'd also like to ask Baristas about their peeves with design. What works and what doesn't. I may want to start a new topic on this and take it out of this group. If this has already been discussed on BX - I haven't found it. Thanks for the suggestion though. I bet a good consultant could work with a good bar designer and come up with a great design. Where will you have your shop, Cavirett? What existing shops do you consider to be great designs. I need to get out to the Northwest and LA to take a look at the newest establishments.
