Who grinder you think that it is better for a coffee shop that it has big needs (about 10kg of espresso per day) and it works at order? The simplest answer would be conical but I believe that flat has better result in the cup. Who you think that it is advisable and why?

The only one that I have had experience with right now is the Super Jolly, and have been satisfied thus far with the exception of the casting of the grind each time, depending on how quickly you are pulling; a little on the wasteful side.
i have some of this problems, and i make my own metal patent!

Dude, I didn't mean to steal the discussion but thanks for the heads up on the ways to correct the waste with the Super Jolly. We just made a couple, and are testing our own versions :)
is ok by me, after all, that is why we make this discussions!
(but you have to show your patend!)

ok I'll get some pics, we have been testing them this last week. We are closing for the spring break in our town on Monday and will be doing intense cleaning. One of the things that we are doing is taking apart our grinders and cleaning them and checking to see what's going on with our cone inserts; checking to see if they were inserted correctly enough not to catch coffee, you know that whole clogging thing is a lot of fun to avoid.

I will say though, that we made them out of one of our java jackets for test purposes, more info to come though.
