OK, 2008 is going to see the opening of Town Hall Coffee in Bala Cynwyd, PA... Now, all I've got to do is sign the lease, complete build out, and get educating the local population on what exactly good coffee is supposed to taste like.
In the mean time, I'm looking forward to checking out Gimme! Coffee's newest joint on Mott St. in SoHo.
Kevin, warm that La Marzocco up for me!

Hi Tim I'm opening my first shop in Northeastern PA next week! Our family is in Phila area, we'll have to take a field trip someday to see your place. Being so fresh out of the building phase and entering the opening stage I am here for any questions or whatever.Best of everything with your new ventture, it's been a great experience so far for us! Great music selection!

Definitely would love to come up, hang out, talk shop and grab a beer. Possibly next weekend would be good. Let me know what time is good for you. When do you plan to open the shop?
  • Tim Noble

I'm walking through the latest potential property tomorrow with the architect and my contractor. The place is amazing, but is also in the process of being sold/bought by a developer (a good thing). Things should settle down about this time next month, and I'll update then.
In the mean time, I think I'll catch a matinée of CLOVERFIELD later this week. That looks SICK.

The interior design elements are coming to me fast and furious.
There's a discussion I read recently (coffeed.com) regarding the issue of bar seating in a coffee house... I just naturally assumed that 3 or 4 stools at the bar would be proper, but it really screws with the flow of customers and the work set-up.
Still, I want an espresso bar, and at slower moments of the day, the barista to wow the avid onlookers, and sell a few extra drinks, to boot.

Good luck with the opening, do it soft.
    Cheers

Hey Tim, we will have to meet at your shop sometime for some coffee and talk. Maybe it will work out this weekend!
  • Wilson Hines

    Tim!
Yessir, I am in Mount Olive, NC - about 1.5 hours from Durham and about an hour East from Pinehurst. I have attended the CCC training, but haven't had the time for a cupping yet, darn it!

I will probably be in Philly this weekend, but I won't know for another 24 hours.

When I am on the road, I have a HTC Touch by Sprint and the web works great, except on the Barista Exchange. I can view everything, but I can't reply or use the functions on the site. So, I will send you a e-mail now with my contact information. Maybe we can get hooked up in the next few days. Chestnut Hill rocks, but I would like to see more of Philly!
  • Phil Proteau

Tim, you can order Rubies from Franke in Seattle. But with an E-61 you won't need any.
