Eli,
The best way to become a "certified" machine tech would be to go to work at the ground level in a factory authorized machine distributors and/or coffee roasters service dept & work your way up then hope/ask for a certified factory training after some time from the company. There are also a couple companys offering schools available through SCAA. Regardless, the only way to really get good is to polish your skills by doing service jobs every day on lots of different brand machines for a long time, rebuliding & modifying alot of machines & reading, researching & networking alot. Cheers! - Matt
