Gidday Eddie, like to say welcome to you! My grandparents used to live in Masterton, Landsdowne way, so spent a bit of time over there when I was young. Is your Company in the town itself?
I find that at 2-3 days the gases of the coffee are still evident and affect the sharpness immensely. At 8 days there is a more nicely rounded cup profile and the characteristics of the coffee are heightened, as the gases don’t blend into the true intended flavour. Although we do try to serve our coffee at the 8 day mark – we are more than happy to prepare it so it reaches the customers on day 2 or 3. All up to personal preference I think. Hey Eddie, lived here now 10 years- Bandung is just down the road, I visit there often. Its a nice town, the Dutch chose the spot well. I have not been to the Wairarapa for a while now.
