    Just a quick update, the lease is almost complete, the design is 90% done and construction must start on Sept 14th! So much do and accomplish in 100+ days!!! More to come...........

    Stephen, You are righr to not ASSUME anything but do not make the mistake of settling for mediocre either. You will reap exactly what you what you envision. I have opened two stores in the last three years a drive through and a walk up and am in the process of opening my third a "come in and sit down" espresso cafe. Envision success. Learn all there is about espresso...how many chemical components make up the coffee bean how are they affected by water, temperature, pressure? At what temperature does the sugar in the different milks change how will this affect the espresso? What happens when hot espresso is poured over ice. What are the advantabes of toddy? It's a great business and coffee drinkers are the best. Envision success and have a great time getting there.

    Just a little idea - on the website when you get it up and running maybe you could have a blog or an area where customers can ask questions about coffee and wine.

    There are several contibutions on the discussion, which you can access from my BX page. The contraption I devised involved the Yama tea siphon filter, which is a two piece filter, with an Astoria dispersion screen between the pieces. It all screws together with no alterations... the discussion gives various ways of trying to keep the cloth filters free of flavor taints, be it a dingy taste from a dirty filter of a synthetic taste from a detergent...
