About Me:
I am just a home barista. I was not really fan of coffee at first. Actually I did not like it. Which is strange for a computer guy. But I did not like to have no good coffee to offer to my guests. And I had no idea what I was serving them. So I decided to get a fairly good home espresso machine. I got a Gaggia Baby Twin and a MDF2.
Then I tried to taste my own coffee. Then I started to like it... not for the taste. It was horrible taste in the beginning. But for the complexity. It was a challenge. I was never happy of what I got. At least what people tended to say about the experience of an espresso, I did not get the same.
So I went into a mission of finding out how to make a good coffee. The coffee beans I bought were not fresh. I tried desperately to find a roaster in my city. But there is none. So I got a popcorn machine, a precise digital thermometer and started to order green beans on the Internet. The popper is too fast. I had to tune it separating the heating circuit from the fan. And then put a potentiometer onto the fan motor (faster than controlling the heating resistor to control the temperature profile). With a lot of practice, and lots of burnt batches, I finally understood how to make an espresso.
But roasting coffee with hot air is not good. Contrary to what you could think, we can have something consistent with a popcorn machine. You just need to find the right way. However, it is impossible to get a dark roast without getting a burned taste. So it is a fight for getting the right roast. Not too light so that it is not too acidic, but not too burned either. Moreover, air seems to dry the oils, and their is a loss of flavor.
After two years of drinking coffee, I finally got a Behmor 1600. And I am happily playing with it. Especially I can roast for friends who are also interested, and can discuss about it.
Now I drink coffee everyday, like everybody else. But also read a lot of things on the Internet about coffee. Forums, blogs, etc. Which gives me idea of new things to experiment. This is what still drives me, experimentation.
