A bit ‘bout Mo’
We are a small coffeehouse-café where Craftsmanship is paramount.
We do not believe in cutting corners, but are driven by an overriding belief that it is better to make it ourselves over buying ready-made shelf stable who-knows-what.

Personally, while i'm comfortable with abilities thus far, there is more to be learned with every shot. Slowly cultivating my palate and an understanding of variables and their relationship to each other. The scope of my expanding abilities has corresponded with a matched desire for equipment better suited for controlling such external variables-- most recently it's been a mazzer mini E, but currently window shopping for a nicely restored PID'd Linea.
it'd be nice to just be coffee geek barista, but a peril of small business demands that i first be the HR geek, the inventory geek, the accounting geek, the food safety geek, the line cook geek, the PR geek... you get the idea.

    This weekend is going to be absolutely crazy. The summer weather is going to bring everyone out to The Hamptons plus everyone will be driving past us for the big Montauk St. Pat's Day Parade. And both my managers are off as luck would have it. We'd love to invite you down during the week, maybe Wednesday, and you could see our roasting in action as well and it won't be as busy.
