Tell us more about your coffee shop or barista skills.
I am the owner of The Black Stilt. It is a leader in environmentally and socially responsible business practices. We divert over 95% of our waste from landfills, use only local products, compost a majority of our waste, involve customers and staff in policy decisions through constant communication, and there are countless other initiatives we do to ensure we remain leaders in ethical business. Further, I have traveled to source taking three staff members to La Minita and Rio Del Negro in Costa Rica; this has given myself and the staff a thorough understanding of how our coffee is grown, milled and roasted. I have a solid understanding of coffee from seed to cup and am a capable barista able to produce quality espresso and maccha based beverages with various types of free-pour art. The main challenge for me now is upping my knowledge of espresso. While capable of pulling great shots consistently and knowing how to tweak it and watch myself, I feel as though I still have a lot to learn.
What cities or countries are you interested in traveling to?
Ethiopa, Guatemala, Colombia, Indonesia, Hawaii (Big Island), plus oodles of other non-coffee nations!
