owner-operated coffee bar in a public market all organic, fair-trade coffees and teas took basic barista training at Intelligentsia, Chicago open less than one year so we're still learning

My professional background is in nonprofit and public management. My business partner and I are new in town and started the coffee shop because we love good coffee and it was hard to find around here. I lived in Seattle for 14 years prior to moving here so ... what else could I do?
