Tell us more about your coffee shop or barista skills.

I am the manager of the deli front counter (which includes a full service coffee bar with both brewed drip coffee and an espresso bar) at The Community Mercantile in Lawrence, KS. We are a consumer/employee owned cooperative grocery store. During my tenure as manager we have begun a process of switching to only fair trade certified organic coffee. We are about 80% of the way there and our roaster (Broadway Cafe and Roastery in Kansas City, MO http://www.broadwaycafeandroastery.com/ ) is currently working on an organic espresso blend for us. As of right now, all of our coffees are FTC and most are organic.
