The only time I will adulter my coffee with sugar is preparing it Turkish/Arabian style. It's become a bit of a ritual for me to do a quick, inconsistent, dinky scorch-job of a Natural Ethiopian or Yemeni coffee in a wok and immediately prepare it as Turkish coffee with a little sugar and cardamom before spending the night roasting or studying.
