Very basic skills. We own a single head Gaggia. Have difficulty getting a great espresso shot.
About Me:
Coowner w/husband, Glenn. We own and operate a seasonal bakery cafe in the heritage village of Paisley, Ontario, population about 1100. Our bakery is housed in a building circa 1895. We moved here from Toronto in 1999 and spent the first couple of years reno-ing, exposing the original tin ceiling and hardwood floor. We have been operating as a bakery up until this point but this year decided to put in some seating and serve lunches. We specialize in light ryes and whole grain artisan breads as well as baguettes, focaccia etc. We make everything on the premises and buy fresh local ingredients whenever possible. I love coffee and would love to get that perfect cappuccino or espresso.

As for machines: We have an old VFA Expres two head machine. Actually, I like using it, but I find that the group heads are too close together for me to work quickly with both of them. Instead, I use the machine as a one head machine and use the right head as my supply for water when doing Americanos. Yes, it has an infusion water tap, but that drops the line pressure if run simultaniously. Anyway, doing two drinks is faster using two heads, but doing 250 drinks takes just as long using one as using two. Not exactly, but if you time yourself you may be surprised. As for other things: I use my own milk pitcher, tamper, thermometer, stainless stir stick, group head brush, tamping mats, dosing cup and a few more things which I take with me to work each day. The store doesn't even own a tamper. What can I say.

Yo! Sorry, I've been super busy at work and not on here in a few weeks. While the boss was off enjoying Montreal, I was working without a break and staying super late after closing.
As for viewing emails: no, but wall posts, yes.
Don't worry about stalkers...no one is going to bother trying to find you out in the middle of no where. ;)
