I have been offered a five year deal to buy an existing cafe I am currently managing. This August will be my second year as a manager there and just tonight, the ownership asked my wife and I (newlyweds as of 6-12-10) to purchase their investment. They gave us a very sweet deal, knowing we do not have any real capital to our names, as they do not plan on owning the shop forever. WE ARE THRILLED!!!
The plan is this:
We are given 95% control over the business for a year, starting…

Last night, the OWC crew got together and cleaned the bejeezus out of the shop. It was an exorcism of old looks, old dust, as a way of welcoming our fall hours and new batch of students to get to know and serve. The U of I school year starts next Monday, meaning there's one week until we are in a deluge of students wandering the streets looking for good coffee, a study space and new friends. Six days remain until the Throwdown here in Moscow, ID, and I am so excited. I have all my prizes lined…

Yet another quick note to say how awesome these folks are:
Mazzer Super Jolly hopper ordered, sadly, slightly damaged during transit.
Replaced without question and received TODAY! that's a one day turn around for getting my hopper back on the grinder.
Thanks again, guys.
I really appreciate the excellent service.

i just finished the install of Michael Elvin's 'Elvinator' and I am so impressed! Just a little piece of plastic in between the doser lever plate and the chute changes everything. On top of a good cleaning, its like I have a new Mazzer! Sure, a little mucking about and scrubbing after getting the doser removed is always messy, but a clean grinder is a better performing one. My counter is cleaner, and my barista are already freaking out! I highly recommend this mod to anyone who works with a…

Ok...So this event was Fantastic! I am so glad I showed up for this, for so many reasons. First and foremost, I got to meet a bunch of amazing people who are passionate about great coffee, pouring excellent drinks, and the turnout for just spectating was so cool! Out of the 30 people who participated, I finished 4th overall!! My friend and staff member, Gabbie competed also, and sadly, she did not go as far as I did, BUT, we made a good showing, bringing a posse with us for support. As far as…

This evening after closing, I went to the shop to practice. Armed with my tamp, a gallon of milk, and some good music, Gabbie and I poured lattes until we ran through our gallons. A lot of good looking drinks were made, photographed and dumped, but the best feedback I could have was later, driving home.
I was discussing what went down with Lenore, and she commented that I need to slow WAAAY down on my pours. Thinking this through, she couldn't be more right. I felt like I was under the gun…

Last night was a doozie. Good food, (feta/onion embedded hamburgers, roasted asparagus with lemon-garlic butter, oven fries and BOOZE!!!) and awesome friends, board games were played and plans for more of the same next week envisioned. Gabbie and Brian are coming with Lenore and I to Olympia for the Latte Art Throwdown, Gabbie is entering, Brian and Lenore are the cheering section. It took me a few hours this morning to recover from our party, but all has returned to normal (except the dishes).…

I have decided to, after all these years of being a barista, to get a certification. It turns out that I know all the things that are pertinent in the study handbook, and it would be a sad day if I failed the test. However, brushing up on the little details never hurts, and I found it to be a good training tool for me in the future when I need to hire a new body to man the bar. My goal is to take this test during Coffee Fest this year, and then work on greater certifications in the next year to…

So, I worked for about an hour today...making drinks.. I did get the schedule up and posted for the coming weeks, and realized my presence was not needed for the majority of the afternoon.
Breakfast was cooked for Lenore and me, we had Poor Knights of Windsor (look it up) and I had an additional omelet. Like you guys really care. But what is meaningful is that Lenore requested coffee, which is a rarity. I am always happy to oblige, and got water heating for the trusty French Press I have…

Moscow, ID has emptied out. The students who graduated last weekend have left, the students who were here for the semester have left too. The die hards who are staying for the summer have left for Sasquatch. A handful of locals have stopped in, left, and now the 'campers' who use One World as their second office are getting here. Josh is carrying the bar without my assistance. His last two hours on our payroll are coming to an end.
I started managing One World Cafe' in July of last year,…
