i'm fucking tired of going into places and getting a dirty little demitasse filled with hot black water with a little red foam on the sides......at least it was hot...theres a knob near the hopper collar that makes your grind finer or more course.

You just don't know how hard I am laughing...and empathizing. I get so tired of going into shops and seeing "Brasilia" machines and some Nouva Simonelli grinder. If I see one of the two, my guard is up, but if I see both I just usually turn around. Let me get clear here, if I am not already. I have never had anything better than a sink shot from one of these machines, save once. IF they get the shot right, they then screw the milk up on the capp. It is enigmatic. Why in heaven's name do they spend $60,000 or even $100,000 on "atmosphere" and just absolutely drop the coffee in the floor, pick it back up, grind it and leave it in the hopper for two days and serve it (of course I am exaggerating). Jason Dominy has the right ratio, I think: 1/3 on coffee equipment, 1/3 on build out (atmosphere), and 1/3 ops money. Me personally, I think these shops have it all screwed up because they just don't love the espresso and coffee. It isn't about the coffee; It is about having a "coffee shop."
