We have started roasting on site. Perhaps a little roasting education.
I have judged at the regional level in USBC, I could give competition guidance.

The next step

Here we are thinking about the next step.
This location proves to be a hindrance to our collective ideals about coffee and its possibilities.
We hope to find ourselves in an area of appreciation for flavor and of local offerings. We have found a location that may be able to support us as individuals set in making a new wave of coffee appreciation in Indianapolis.
Wish us luck in finding the funding to do this, and pray we are able to remain friends as well as business associates!

It's roasting day.

Here I sit listening to the roaster hum, and Sandy curse the flame for going out.



She roasted last week and yesterday after we closed. We tasted some Colombia that she roasted yesterday. It was a little too fruity for her tastes, but I thought it was ok. I would like to see a bit more caramel in the flavor. It did go a tad sour once cooled.



Flame didn't go out yesterday, so she thought it was perhaps some moisture in the drum. Wonder why it is doing this… Continue

I got a call on Monday, would I do a catering for Tuesday? I almost said no, well at first I did say no. It was for 60 and I thought they were talking lunch. No they just needed a morning snack with coffee, tea and hot cider. Ok. Delivered to the airport at 10AM, Ok. Who is this for, I ask?



We need to have something for the press and staff when they get in town with Obama.



I did not drop the phone.



I said yes of course I can do this.

Hey Bj - no luck yet, but I am going to need to find a commercial kitchen soon as I am starting to get some coffee catering gigs booked for late February through June. OK... just read Chris's review of the place... sounds great. Next time I'm in Indy (I have a sister-in-law in Greenfield) I'll stop by. My question - what the heck is Shagbark Hickory Syrup? I grew up in Ft Wayne and spent several happy years at Purdue, I know what a tenderloin is supposed to look like and just recently stopped drinking pop but have never heard of this stuff. Please fill me in?
