Hey Hava.  We are opening possibly the first worker owned specialty cafe (at least in california).  Hit me up if you wanna talk ins and outs of cooperatives.  We think it's the perfect model for getting and keeping the best baristas.  Ours is structured so everyone is an equal owner, but it's also possible to have a kind of tiered system based on seniority.  You could also do it as an LLC basically structure it co-op ish.  Anyway, happy to answer any questions I can.
