Hope all's well with the cafe, can't wait to see it. I'll keep you in the loop about my next TX visit.
Sip Slowly.
they remodeled and look better than ever, with a new bar, 3-group Linea and Mazzer grinder. as of last month, they were still looking for a roaster that offered everything they're looking for (mainly a good training program and an understanding of good espresso). my last family visit to texas had me training the Mod staff for two days, and i think i sparked the fires a little, as a few of their baristas have called me with super-geeky questions about coffee prep.
i'll have to see how far those two training sessions go, and how long they can go before another session is necessary. hopefully, they find a roaster nearby soon that can keep up the quality, or i'll be repeating myself there every year!
sorry i missed your place last visit - didn't quite make it into houston-proper as i'd hoped. let's keep in touch so i can plan for a visit next time. i'll bring some coffee to play with, too!
pictures plz!
i remember driving for an hour just to get to cafe brasil from galveston just for a good cup of coffee and mediocre espresso... that is, until mod coffeehouse opened in galveston (RIP). then ike had to come upend the whole city. i don't think they'll be able to reopen for a few years at least.
you'll be a welcome addition to houston, i'm sure. and i'll hit you up there next time i visit my folks in texas!
Take Care,
Steve
