Good luck man, you'll be lucky if you can even find somewhere that has real milk in the philippines (only kind of exaggerating) They do have a chain called Cordillera coffee that was better than anything I could find there, and believe me I tried desperately. Found one or two other OK local ones in Angeles City, but don't remember their names.
Malaysia is amazing. Kuala Lumpur? There aren't many "american style" cafes other than Starbucks, but most eateries have coffee (Kope?) and tended to be pretty tasty. Not exactly third wave, but kind of like good Turkish coffee, really thick and will keep you buzzed for hours.
Sorry I don't have more, but have fun!
It's been many years since I've been to Manila (a shame), but I've been fascinated by the Barako coffee and have been interested on the efforts of Cafe Figaro in promoting that home-grown Liberica coffee.
But really, I like meeting the girls at Starbucks Rockwell and the Silvanas at Figaro.
