Simply take sips and swirl to get a good mouthfeel. Also find pressing my tongue against the roof of my mouth brings out the best flavors the spro has to offer. Usually do this within 30 seconds after the extraction and sometimes let it sit a bit to see how the taste is as it cools.

I just pull the shot directly in my mouth, it saves time and dishes that way.
Ya, I forgot to add that is swish it in my mouth 3 times, gargle it and then swallow.(thats what she said:)
But seriously I drink espresso all the time and dont have a certain way i drink it, I just try and enjoy it without thinking to much. I over think everything before I actually have the shot(grind, temp, tamp, dose, etc), so once its made and the taste is to my liking (not a sink shot) then i just sip til gone.

I have to agree with Dustin on this. Its sad but rarely do people order straight espresso shots and take the time to taste it right. If you're trying to put yourself in your customers shoes I'd do what Dustin does, toss the sucker back. But hold it in your mouth for a bit because as a trained barista you'll be able to distinguish the good and the bad fairly quickly.
