Hi I would like to say good congrats on your new baby, I'm a very small roaster, I specialize mainly in pan roasting beans, and distribute for some larger companies but a word of wisdom Even if you think the coffee isn't that great you may not want to make such a bold change in roaster, I have worked with Intelligentsia, great company great bean, it's not cheap, so before you go trying to justify the increase for a cup of coffee you may want to start slow, I love their coffee but unless you are gonna be able to keep the same coffee prices you want to start small.I'm available for exchange. make the change. raise your prices. change your menu, change your equipment, paint new colors, retrain everyone and do it allright all at once. Don't dilly dally and draw out the pain. Hit it strong and make the business yours.
Thats my advice. Intelligentsia rocks. Buy the best you can of every product you sell. Base yourself on quality and give your team pride.
Give them what you do best.
