Spot Coffee is located in downtown Delray Beach- 44 East Atlantic Ave. Spot roasts their own coffee( via Buffalo, NY) and has a full breakfast/lunch menu as well. This is my cafe, so I won't boast.
Panther Coffee is in the Wynwood design district in Miami- 2390 NW 2nd Ave. Roasting is their specialty and you can order their coffee online- however, I highly recommend popping into the cafe during operating hours and scope out the roastery over a Brazilian Clever.
The Beat Cup in Delray Beach serves Panther Coffee as well. The menu at both cafes are as simple as they come- no nonsense, just coffee and a nice vibe (just the way I like it).
Brew in Fort Lauderdale and Harold's in West Palm both carry Intelligentsia- the baristas tend to be hit or miss, but it's better than most shops you'll encounter.

Mojo Books & Music has an awesome coffee bar with Yama iced coffee and excellent coffee from local roaster Buddy Brew & Kahwa. Lots of cheap, used books and things there too!
