What are your thoughts on the single portafilter? For a single shot, does anyone pull a double and pour out the second?

At our shop we always pour doubles for a few reasons. First, the design of the single basket doesn't lend itself well to optimum saturation of the coffee cake, usually requires some grind adjustment as you may have noticed, and rarely results in the same shot quality/flavor etc. I'd rather sacrifice a shot to serve one excellent one than the alternative. Also, all of our drinks are priced to include double shots so only serving one doesn't change our margin (and can actually increase margins when two single shot beverages are back to back.)

Finally, when there is an extra shot floating around it pretty easy to make someone's day with a free shot!

I, personally, don't ever use a single filter. I always use the double, and if there is an extra, I would pour the extra into a small container to chill for iced lattes, blended drinks, etc. I wouldn't make it a habit to give them out, because, inevitably someone's going to get pissed that you charged them 60 cents for an extra shot, but gave the guy in front of them a shot to try. I would just be tactful with those samples. That's all I'm sayin'.

I say give it or drink it! I don't don't know anyone using single baskets..
Good, thanks for the feedback. I have been using the double only for years, and teaching the double only for years. I am opening a new store in Ohio this week and a local roaster (Berardi's) and the owner were very adamant that this method was absolutely ridiculous.

I am glad to see all the reassuring feedback so i can forward this discussion on to "the experts".

Good answer Jason! Matt taught us at ABCs to put it in the draw and forget about it. It's only good for an extra handle. It might make a good trophy topper.

I worked at shop that kept shots left over in a container for cold drinks, but you and I both know that those shots end up being subpar even for cold drinks. In my humble opinion, fresh shots for everything and leftovers for your mouth!

Alas, I should have stated in my post that those leftover shots you chill should be used by the end of that day. Using fresh espresso in blended drinks screws with the consistency, and chilled shots or cold brewed coffee are best for those. I know plenty of people that make their iced lattes with chilled espresso, and they are just fine. I am not saying I think it's best, but if your only option is to throw them out, I say use them as chilled.
Fair enough. I would agreed that toddy or cold brew is best and that any blended drink is messed with when you add hot espresso, but I guess when it comes down to it there's a certain amount of discrepancy in how things can be done with that.
