This maybe rather particular, but coffee people are particular folk so I thought I'd ask. As a barista, would you prefer the pitcher rinser behind the knock box as pictured? Or, the other way around? Go.

Not necessarily either. You want the pitcher rinser next to a steam pitcher drain rack. Like where the cup dispenser pop ups are. And probably on a different side of the espresso machine than the knock box which would enable a separate barista to handle the milk versus shots during slams.

We've got a knock box on each side of the machine. Is a pitcher drain rack necessary? Sounds like a nicety I've never used before.

After you rinse a pitcher what do you do with it, just set it 'em down right side up? In our area that's a health code violation, not draining. Beyond that it's just asking for small remaining water and possibly small trace amount of milk to stay in and dry in the pitcher.

What Mike said. Two knockboxes is duplication. Think about your workflow - pitcher rinser and knockbox are completely unrelated.

My last bar had the knockbox next to the grinder, though right in front of the grinder is nice too (on some grinders - notably the Robur E - you can purge directly into the knockbox. In a rush it's an easy cycle: dose, tamp, pull, knock, wipe, repeat.

We did not have a pitcher rinser, but the dump sink and drain area (just a clean towel for us) were together and near the milk fridge. This particular flow allows for pitchers to be rinsed and then either reloaded or set upside-down to dry. Having a small area for used pitchers to park briefly in the vicinity but not in the way is nice too.

One other thing - a knockbox next to clean white cups is a really, really bad idea. They're gonna get splattered. Next to a pitcher rinser seems ill-advised, as you're gonna have airborn milky-watery droplets. You might want a bit of a partition there.

Mike, after a pitcher is rinsed it can hang upside down on the rinser to dry. With volume kicked in it's getting used right away. Otherwise, right side up on the counter. Trace water/milk isn't really an issue. 

Brady, I didn't even think about those cups. We'll see once things are rolling how much of an issue it is. They're spring loaded and w/ the main knock box on other side of machine in front of grinder, I'm not worried.

Sticking with the setup as pictured. If I feel it works better otherwise, we'll switch it.  I may even drop the knock box and put in a rinse tray. Again, thanks for the input everyone!
