lindsay,
the description you gave of your set up is very similar to what i am planning in a coffee shop. while french press will be used as our form of a standard cup of coffee, i would like to offer other various methods to our frequent customers looking for new adventures in coffee. i've been thinking of even going so far as to offer pour overs in 3 different filters: paper, swiss gold, and cloth. instead of using a pour over station, it seemed good to consider having several chemex pots on hand for the paper filter orders. i've noticed that there is a bit of a light papery taste in the cup, but i know that some people will probably insist on having a coffee that is super clean. i would be very interested to hear your experiences in using chemex in your shop. i'm curious to hear how people integrate this into the menu and how well such a brew method performs in the busyness of the day. sorry i can't answer your questions.

If you want to create a aah moment try a vacuum/siphon brewer. You can brew coffee right at the table. See http://www.coffeegeek.com/guides/siphoncoffee for an example.

thanks everybody-
today makes two weeks the shop has been open, and we're about even on the sales of french press coffee and chemex
once you show it to people, and talk a little about it, customers are super-eager to try something that may be new to them

and to al, we're planning on getting siphon brewers super soon, and i'm pretty excited- i don't live in an area where people usually like to try things different from the norm, but given the success of the chemex, i am pretty confident the siphon will do well too.

and we've been selling alot of turkish coffee too, just fyi

We offer chemex as well, but we only have one, and we don't advertise it that well. Altho we are about to get a few more and push it hard. When we do let customers know that we have a chemex they order it pretty regularly. I'd suggest getting like three or four 15oz chemexes and see how that goes. Much luck!

Great to hear. My shop hopefully opens Wednesday. We are a drive thru so no siphons. :)

The shop I work for, RED EYE, in Athens, brews exclusively on Chemex for now. That said, 100% of our coffee sales are on Chemex.

To avoid paper taste, I prewet the Chemex filter with hot water.

People seem to be having a generally positive response to the item. We'll know for sure when we start merchandising. To be certain, the Chemex produces a very wonderful cup of coffee: the proof of the pudding is in the tasting.
