So here is the question. I know the best way to store the coffee in small increments. But what about in large containers when letting my espresso rest for 5 days? What should I use then? Rite now I am using those large white buckets. Is that a mistake?

I use those yellow water dispensers with the red lids... you know the ones. We had a whole bunch of them in the basement here when we moved in so I just use those. They work well and are big enough for a couple of days. Jeez... now you've got me wondering if those are a mistake... haha.

I create a piezo-electric field using a systematically placed array of crystals. It takes exactly nine crystals per pound of beans. You must be certain to create a spherical, rather than a cube-shaped environment for them to reside in. I use the field to surround the just roasted beans. The field reduces the half-life of the bean by a factor of six.

Otherwise I use the large white lidded containers from Ikea.
